Well I was going to make chicken fajitas but hubby just had to stop at Apple Bees for lunch today and had fajitas for lunch so now I'm making pork chops, mashed potatoes, and green beans. Maybe a salad.

AHH Whats with you woman and the green beans, that might be the only vegatable that I dont like
The wife always makes them.....it must be a mom thing.

No actually corn and carrots are my favorites but green beans seem to go better with pork chops and it's a color thing. It just makes the dish look right. lol

Buffalo Chicken Pasta (here's the recipe I use)
  • 1 pound penne or other medium pasta shape, uncooked
  • 1 tsp. paprika
  • 1/2 tsp. salt
  • 1/2 tsp. garlic powder
  • 1/2 tsp. black pepper
  • 1 pound boneless, skinless chicken breasts, cut into 1/2-inch pieces
  • 2 tsp. vegetable oil, divided
  • 1-2 tsp. hot sauce
  • 1 cup sliced celery
  • 1/2 cup chopped red onion
  • 1 cup low-fat mayonnaise or miracle whip
  • 1/2 cup low-fat blue cheese salad dressing
  • 3/4 cup skim milk
  • 2 Tbsp. blue cheese, crumbled
Prepare pasta according to package directions. While pasta is cooking, combine paprika, salt, garlic powder and pepper; sprinkle over chicken, stirring to coat. Add 1 teaspoon oil to a large skillet and heat over medium-high heat. Add chicken to skillet and saute over medium-high heat, stirring frequently, until chicken is golden brown and cooked through, about 4 minutes. Add hot sauce; cook 1 minute. Remove chicken from skillet. Add remaining teaspoon of oil to skillet; add celery and onion and saute 2 minutes.

Combine mayonnaise (or miracle whip), dressing and milk in a small bowl. Add to vegetables in skillet. Add chicken. Stir constantly and cook over medium-low heat until thoroughly heated. When pasta is done, drain and return to pot. Add contents of skillet to pot and mix well. Transfer to serving dish and sprinkle with cheese. Serve immediately. Serve with additional hot sauce if desired.

no fajitas tonight...my daughter has picked up a bit of a stomach bug and I didn't want to tempt her with a lot of diary. I made each person whatever sandwich they wanted and chicken noodle soup.
